Beetroot Pancakes

Ingredients:
1 medium beetroot, peeled and grated
1 cup all-purpose flour (or oat flour for a healthier option)
1 large egg
1/2 cup milk (any type you prefer, including plant-based)
1 teaspoon baking powder
Salt and pepper to taste
Olive oil or cooking spray for the pan

Optional Toppings:
Avocado, or fresh herbs for garnish
Instructions:
Cook the Beetroot:
Peel and cook beetroot by boiling it in water with a pinch of salt. Set it aside in a bowl.
Mix the Batter:
- In a blender or blender cup, mix the cooked beetroot, flour, and egg.Add the baking powder, then season with a pinch of salt and pepper.
- Mix all ingredients until you have a smooth, even batter. If the batter is too thin, add a little more flour.
Cook the Pancakes:
- Heat a non-stick pan over medium heat and add a small amount of olive oil or cooking spray.
- Pour a small scoop of batter into the pan, shaping it into a round pancake. Cook for about 2–3 minutes on each side, or until golden brown and cooked through. Repeat until all the batter is used.
Serve and Enjoy:
Serve warm, topped with a slice of avocado or fresh herbs if desired.
