Simple and Nutritious Chicken Soup Recipe
Ingredients:
1 skinless chicken breast (a great source of lean protein)
1 carrot, sliced (rich in beta-carotene)
1 zucchini, diced (high in fiber and hydration)
1 celery stalk, chopped (supports digestion)
1 Yuca
1/2 onion, chopped (anti-inflammatory properties)
2 cloves garlic, crushed (boosts the immune system)
1 liter of chicken broth (or water with spices for extra flavor)
Dash of turmeric (a powerful anti-inflammatory ingredient)
Salt and pepper to taste
Thyme and cumin to taste
Dash of red pepper flakes
Juice of half a lemon (adds vitamin C and enhances flavor)
Fresh cilantro or parsley for garnish
Green peas
Rice cauliflower
Preparation:
In a large pot, saute the onions and the garlic with a little bit of olive oil until the onions are translucent.
Add the chicken breast, carrots, celery and all the spices. Let it cook over medium heat for over 10 minutes.
Add water and adjust the rest of the spices to taste and let it cook for another 15 minutes.
Add the carrots, yuca, green peas and the rice cauliflower and cook for approximately 15 minutes (until the vegetables are tender).
Serve it with avocado
