Protein Carrot Muffins

Adding these muffins to my routine has been a game-changer. Not only do they satisfy my sweet cravings, but they’re packed with protein and fiber to keep me feeling full longer. Whether as a quick breakfast, a post-workout snack, or a mid-afternoon pick-me-up, these muffins are my secret to staying energized on even the busiest days.

Ingredients:


  • 8-10 cooked carrots, puréed or mashed

  • 2 eggs

  • 1 tsp cinnamon (ceylon is recommended because of its health properties, add more if desired)

  • 1/2 tsp nutmeg (plus more if desired)

  • 2 tablespoons avocado oil

  • 1 ½ cup ground oats, oat flour, or your choice of flour (check consistency)

  • 2 tsp baking powder

  • ½ cup vanilla protein powder (optional)

  • Optional: extra shredded carrot for topping


Instructions:


  1. Prepare the Carrots

    Start by peeling, chopping, and boiling the carrots in a saucepan with just enough water to cover them. Once tender, drain and let them cool, then purée until smooth. I use my blender for this step – make sure the carrots are cool to avoid any blender mishaps!


  2. Mix Ingredients

    In a mixing bowl, beat the eggs and avocado oil together. Add the carrot purée and stir until well combined.


  3. Combine Dry Ingredients

    In a separate bowl, mix the flour, baking powder, cinnamon, nutmeg, and protein powder.


  4. Bring It All Together

    Pour the wet ingredients into the dry mix, blending until smooth. If the mixture feels too thick, add extra oat flour until the consistency feels right. As a final touch, fold in some shredded carrots for extra texture.


  5. Portion and Bake

    Oil your muffin tin and pour in the mixture. Top each muffin with a bit of shredded carrot if desired. Bake at 350°F (375°F for a little more crisp) for 20 minutes, checking with a toothpick after 18 minutes.


  6. Storing and Enjoying

    Let them cool before storing them in an airtight container. They’ll last up to three days in the fridge or can be frozen for later. I often grab one in the morning and spread a bit of peanut butter on top for extra flavor and protein!


These muffins are a great snack for staying energized, and the warm flavors of cinnamon and nutmeg make them even more delicious.
